happy monday! how was your weekend? between running errands with the hub and cleaning up the house, i managed to squeeze in time to make some homemade hummus. it went together so quickly and is absolutely scrumptious!
- - 2 15-oz cans of garbanzo beans; drained
- - 4 garlic cloves, minced
- - 2/3 cup of tahini
- - 1/3 cup lemon juice (or lime juice)
- - 1/4 cup olive oil
- - 2 tsp minced ginger
- - 1 tsp salt
- - 1/2 tsp onion powder
- - 1/2 tsp nutmeg
- - 1/4 tsp cumin
- - 1/4 tsp cayenne pepper
combine all ingredients in a food processor and pulse until smooth (if you don't have a food processor, you can use a hand held mixer for a chunkier consistence). adjust seasonings to taste and spoon into a serving bowl. serve with veggies, pita bread or crackers. makes about 3 cups.
i love hummus because the possibilities are endless! you can add an array of spices, add some heat or just make it plain and simple. it's delicious as a dip or as a spread for sandwiches and wraps. enjoy!
