this week's dinners were full of local flavors and hearty warm dishes. they are few 'oldy favorites' that you might recognize, but several newbies as well. and don't forget, if it wasn't delicious and totally hubby approved, it doesn't make the list!

monday: potato quesadillas with roasted cauliflower
tuesday: white bean and vegetable stew
wednesday: tofu bay cakes (image via vegan dad) served with seasonal veggies and lemon cream with blackberries
thursday: potato cakes with roasted cabbage served with my new favorite carrot salad
friday: polenta pizza served with a seasonal salad

we follow a whole foods, plant based diet. the dinner ideas posts are a way for me to log our dinners, how we make eating this way easy, and hopefully inspire you to try some new things as well. they are always meat free, dairy free and often gluten free. you can follow the posts here, and i encourage you to share your favorite recipes with us as well!

    I just wanted to pop in and tell you that the post you wrote last week about your experiences after a year of vegan lifestyle really inspired me and this week I decided to experiment with switching to a plants-based, whole-foods diet. I am going to try it out for awhile and see what happens, but so far, I feel really great and I don’t even miss the dairy or meat. I made the almond fettachini alfredo recipe you linked too (it was delicious) and am going to try the Thai Curry one tonight. So just wanted to let you know and thank you for sharing your experience and by doing so, inspiring me to try it out!

  • My resolution this year is to cook more, and all of these photos/recipes you post are really inspiring. My mom is coming for the month of February and while not a vegetarian, she always says she could easily give up meat because she loves veggies so much. I can’t wait to try out some of your recipes on her!
