hi friends! in our town, we're bursting at the seams with pumpkins, onions, rainbow chard, tomatoes, figs, apples and squash- all of which made an appearance somehow this week in our meals! what's local in your town?
monday: yummy vegan gluten free pizza served with this warm butternut and chickpea salad
tuesday: vegan jambalya with sauteed rainbow chard
wednesday: vegan "chicken" noodle soup (i used tofu instead of tvp)
thursday: stir fried shiitake mushrooms with tofu and bok choy
friday: lentil walnut apple loaf with sweet potatoes and sauteed rainbow chard
