happy friday, lovelies! we've been traveling a lot lately, so dinners have had to be quick, wholesome and hearty. the veggies that are ready for pickin' here in north carolina are a little different than what i'm used to in california, so i've adjusted a few of the recipes to accommodate the local veggies. all of these recipes make 'throwing' in whatever is in season easy!
monday: black rice stir fry served with a carrot and avocado salad
tuesday: lentil and bulgur soup
wednesday: roasted tomato, basil and onion pesto pizza (used a gluten free crust!)
thursday: vegetable rataouille
friday: bow ties with broccoli pesto served with a salad topped with nuts, fruit and avocado
