happy friday sweets! i have so enjoyed sharing with you this week, i hope you've had a great start to your june! our csa box this week included: raspberries, beets, onions, snap peas, lettuce, parsley, carrots, escarole, collard greens and zucchini. my favorite meal this week was probably the tortilla soup- topped with lots of avocado, of course! hint: be looking for these veggies at your store or farmers market- they’ll have most likely traveled less distance to get to you!
monday: black bean and butternut squash burritos (i used zucchini!)
tuesday: sweet chili lime tofu with collards and quinoa
wednesday: squash and red onion pasta (i subbed more zucchini)
thursday: vegan tortilla soup served with polenta
friday: personal veggie pot pies with roasted sweet potatoes and tuscan kale chips
