for some reason, this week i was craving hearty, savory meals- so i just went with it! i've also finally returned home to california, where our local veggie stand met me with heirloom tomatoes, miniature bell peppers, fresh watermelon and loads of summer squash. yum.
monday: morrocan pizza topped with daiya cheese and served with chopped heirloom tomatoes
tuesday: vegan tofu spinach lasagna, yum
wednesday: braised cabbage with vegan sausage (i added apples and used apple sage sausage).
thursday: black eyed pea vegan burgers with roasted sweet potatoes
friday: red curry with tofu and kale
