happy friday, lovelies! even though we're traveling, i'm happy to say we've been able to maintain a pretty regular cooking schedule. this is what we've been eating this week- tried and true recipes that i consider my 'go-tos' when on the road (except the risotto which was new!).
monday : collard green wraps
tuesday: vegetable wellington redux (leave out egg and goat cheese!)
wednesday: sweet potato, sage and scallion risotto
thursday: black rice stir fry
friday: tofu bay cakes (image via vegan dad) served with roasted sweet potatoes and kale
