happy friday, friends! we've been trying out a new grain this week called farro. have you ever cooked with it before? it's really delicious and amazingly good for you, too!
monday: baked apples stuffed with wild rice (i used vegan cream cheese and cheddar cheese) served with leftover butternut squash soup
tuesday: potato and cauliflower burritos
wednesday: roasted fennel and farro salad
thursday: paella primavera
friday: vegetarian italian farro soup
