pomegranate season is upon us which means i'm throwing pomegranate seeds all over the place (especially after i finally figured out how to de-seed them!). our favorite meal by far this week was this most delicious pomegranate, kale and wild rice salad with walnuts by pinch of yum. i left off the feta and replaced it with some tempeh croutons which made it a light and refreshing yet filling dinner for us. also on our menu this week was a thai red curry (something i just through together) and pumpkin mole. tonight, i'm planning on making this creamy tuscan white bean soup. it's getting chilly over here! perfect soup weather. :)
