each week our csa box seems to be bursting with all the ingredients i need to make this sumptuous shepherd's pie. carrots, kale, potatoes and tofu make this a meal on it's own, perfect for chilly fall nights. i like to serve it with homemade bread and a dollop of vegan sour cream. yum!
