in preparation for baby roost’s arrival, i’ve made several week’s worth of meals to put in the freezer and will also be relying heavily on family member’s cooking for us over the next several weeks. since i’ll be out of my normal cooking routine for a bit, the dinner idea’s series is going to be a little different for a while. instead of posting our weekly meals (cuz, who knows what we’ll be eating?!) i’m going to instead highlight a few of my all time favorite recipes from around the web. the regular dinner ideas series will resume on friday, october 25th. :)
first on my list of favorites is this summer vegetable curry from 101 cookbooks. it’s to die for, and super versatile. i’ve made it according to the exact recipe, but have also made it several times with whatever ingredients i have in the fridge. the key is to use a creamy coconut milk and lots of green curry. you can make your own green curry, or grab some green curry paste at the store like this one from thai kitchen. i serve it either over brown rice or organic somen noodles and always top it off with freshly sliced avocado (because avocado goes well on everything, right?).
