over the weekend, i made some of my favorite potato salad to share with a group of friends and family. to my delight, everyone loved it! it happens to be both vegan and gluten free, though you'd never know it by the way it looks or tastes. it's creamy, and rich and slightly crunchy due to the celery. it just seems to hit the spot when i'm craving something light and salty. find the recipe below!

potato salad usually calls for freshly chopped onion, however i've omitted it here and replaced it with onion powder. the taste is still the same, but i find that the onion powder doesn't leave me tasting onion all day. however, if you'd prefer you can absolutely use fresh onion (and garlic). it's up to you!

ingredients:

- 3 lbs small red potatoes
- 6 celery ribs finely chopped
- 3/4 cup fresh parsley
- 1/4 cup brown rice vinegar
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp salt
- 1 tsp black pepper
- 1.5 cups organic vegenaise

directions:

after washing the potatoes well, place them in a large stock pot and fill it with water until the potatoes are slightly covered. bring to a boil and let simmer until potatoes are tender when pierced with a fork, about 25 minutes (be sure to avoid over cooking!). drain and let the potatoes sit until they are cool enough to handle. chop the potatoes into bite sized cubes and toss with the vinegar, salt, pepper, onion and garlic. add the celery, parsley and vegenaise and toss until well combined. refrigerate until ready to serve. *tip: make this a day in advance to really bring out all the flavors!
