plant based dinner ideashappy friday, lovelies! most of our meals this week were perfect for winter weather. full of warm spices and hearty ingredients. our favorite by far was the big yoga bowl. it's so simple, though i had never thought about layering ingredients this way. i added kale and roasted red peppers, and it was fresh, filling and fun to eat. i'm already planning for another version, where i think i'll add some roasted beets and turnips to the mix.

monday: southwestern breakfast hash (for dinner!)
tuesday: pumpkin curry with chickpeas
wednesday:  homemade falafel with leftover curry
thursday: the big vegan bowl
friday: yummy yoga pot

  • This is one of my favorite features on your blog! I’m not vegan, but I only serve meat once or twice a week (for the sake of my husband!) But lunch is a completely different matter…I find myself constantly getting in a turkey sandwich/pb&j rut due to lack of creativity and would love some non-meat ideas to get out of it. Thanks for writing!
