happy valentine's day my little sweet potatoes! i've been beyond excited to discover the first mess this week. i've been drooling all over my keyboard as i scroll through laura's vegan archives, and have even been able to try my hand at a few of her recipes this week. i'm happy to say that i have a few new favorites myself and can't wait to start cooking my way through her blog!
monday: chana masala
tuesday: veg chicky parm (made vegan by using substitutes)
wednesday: favorite tofu - topped everything this week with it!
thursday: red pepper rapini with white beans and grits (made vegan by omitting cheese & egg, topping it with above tofu)
friday: favorite lentil soup
