a couple of our meals were so good last week, that they ended up back on our plates this week! we started mixing in a few spring veggies to our meals as well and they have been so delicious. i'm in no hurry to say goodbye to butternut squash and winter kale though. :)
monday: simple tomato soup
tuesday: chala masala
wednesday: green powerhouse pesto plate
thursday: baked farro with butternut squash
friday: red pepper rapini with white beans and grits (sans the egg and served with tavorite tofu instead)
