happy friday, friends! nourishing us this week were lots of greens: lettuce, spinach, spring onions, zucchini, avocado, peppers and parsley. yum! our favorite meal this week was probably the powerhouse pesto plate. it's so light and refreshing (yet filling)!
monday: simple tomato soup served with a local greens salad
tuesday: southwestern tofu scramble with roasted potatoes
wednesday: wild rice salad (yum!)

friday: white beans and grits paired with this tofu
