can you believe it's friday already? this week has flown by, but we've enjoyed some really yummy meals along the way. bright spring veggies like kale, summer squash, cauliflower and asparagus brought them all to life!

monday: black-eyed pea and kale stew
tuesday: grilled potato and arugula salad
wednesday: crispy peanut tofu and cauliflower rice
thursday: tofu omelets with scape pesto
friday: caramelized onion mac n cheese

  • Oh my gosh! As soon as I saw the crispy peanut tofu, I knew I had to try it! I made it last night, and while a little more labor and time intensive, so totally worth the delicious outcome. And I had a reason to use Bok choy for the first (and definitely not last!) time. Thanks for this and the other dishes. Hope to do the summer curry soon too :)
