hello, friday! have i ever told you how happy i am to share with you the meals we eat each week? the most common question we get asked is, 'so, what do you eat'?. that very question inspired this series over two years ago! i hope seeing a glimpse into our weekly meals will inspire you in your own kitchen and help your meal ideas abound with plant based recipes. here's what we ate this week!
monday: triple stacked quesadillas
tuesday: "ricotta" stuffed cabbage
wednesday: roasted beet burgers
thursday: garlic scape pesto over pasta and veggies
friday: cucumber and avocado soup served with homemade bread
