i have always loved creamy things. at first, this was my biggest concern about switching over to a plant based diet, but i quickly realized just how many options there are for creamy-vegan-things! this cauliflower alfredo is not exception- it's oh-so-creamy, rich and full of flavor.
for this recipe, i used SO delicious coconut creamer (think half-and-half). it's amazing! i use it as creamer in my coffee and in dishes i want to make creamy. if you don't have any, you could always use non-flavored almond milk.
