oh my. this homemade nacho cheez is so delicious! the cashews make it super creamy and the pimientos bring out all the flavors of traditional nacho cheese (*see ingredient notes on the recipe). i'm planning to drizzle it over a big platter of nachos topped with beans and salsa as an appetizer. no one will ever guess it's vegan!
