this may be the best dish i've ever made. i'm not kidding. i can't stop eating it!
a most delicious spin on traditional mashed potatoes. add flavorful beets, rosemary and 'cheesy' nutritional yeast and this dish is exploding with flavor. a new favorite for sure!
a few notes on the recipe: you could substitute olive oil (or any other oil) for the coconut oil, but i love using coconut oil for the health benefits. my favorite vegan butter is made by earth balance. you could play with making these sweet (think cinnamon and raisins), or more creamy (think a dash of almond milk and vegan sour cream).
