Salt & Cocoa Truffles

something just feels right about eating truffles at christmas time. pair them with some so delicious nog or apple cider and i think it's the most perfect dessert! they're light enough to not be over-filling, but rich enough to feel indulgent. plus, they're easy to make!

i rolled mine in cocoa powder and sea salt, but you could also try crushed pecans, coconut or pretzel meal. a personal favorite of mine is to sprinkle the tops with hickory smoked salt!

note: if you're vegan, be sure to get dark chocolate that is as well. my favorite for these is ghirardelli's 72% dark chocolate.
